Adonan dasarnya semua sama, choux pastry sederhana. Dari 1 resep dengan modifikasi filling bisa di dapat macam-macam varian sus. Yang sempat difoto sebelum berangkat tadi eclair, eclair krim, long sus krim keju, dan sus isi vla. Yuk langsung eksekusi...


Bahan Bahan
  • 250 cc air
  • 75 gram margarin
  • 125 gram tepung terigu protein sedang
  • 4 butir telur

Cara Membuat Adonan Dasar Sus/Chouk Pastry
  1. Dalam panci didihkan air dan margarin dengan api sedang hingga mendidih.
  2. Matikan api, masukkan tepung terigu. Aduk rata dengan spatula kayu hingga menjadi adonan yang bisa lepas dari sisi-sisi panci.
  3. Panaskan kembali adonan dengan api sedang, aduk sampai dasar panci berkerak adonan tipis. Matikan.
  4. Istirahatkan adonan selama 10 menit sampai hangat. Satu per satu masukkan kuning telur dalam adonan, sisihkan putih telur. Aduk hingga homogen/rata. Baru masukkan putih telur secara bertahap. Saat pertama putih telur dimasukkan dan diaduk, adonan akan seperti pecah-pecah..teruskan saja mengaduk nanti akan tercampur. Koreksi kekentalan. Adonan harus bisa mengalir pelan dari ujung spatula jika diangkat tapi tetap berbentuk saat jatuh.
  5. Masukkan dalam kantong spuit. Siap dicetak menurut selera.
  6. Panggang dalam oven bersuhu 200'c selama 45-50menit.
  7. Isi dengan krim kesukaan, vla vanilla, ragout dll dan beri topping yang sesuai.

Dari 1 adonan ini di dapat 25 sus ukuran normal seperti di gambar (eclair dan long sus keju) atau 10 sus jumbo (sus vla bulat).

Tambahan Untuk Resep Vla

Bahan Bahan
  • 55 gram tepung maizena
  • 100 gram gula pasir
  • 1/2 kaleng susu kental manis putih ditambah air s/d jadi kurleb 500 ml
  • 2 butir kuning telor (diusahakan jangan sampai ada putih telor yang tercampur)
  • 1 sendok makan margarin
  • Sejumput garam
  • Rum pasta/vanili pasta secukupnya

Cara Membuat Vla
  1. Campurkan maizena, dengan gula pasir, susu yang sudah campur air (jangan dimasukkan sekaligus), kuning telor, margarin.
  2. Aduk menggunakan whisker diatas kompor dengan api kecil sampai mengental.
  3. Angkat whisker, kalau vla sudah mengalir seperti air, berarti cairan ndak perlu ditambah.
  4. Tambahkan rum pasta atau vanili pasta secukupnya. Didihkan, angkat dari kompor.
  5. Vla siap di gunakan
