Tak ada kentang ubi pun jadi, kalau org Palu pasti sdh biasa jalangkote ubi,, banyak dijual dimana2 krn kentang biasanya mahal jd org jualan jalangkota kentangnya diganti ubi jalar. Rasanya ga kalah enak dg jalangkote isi kentang.


Bahan-bahan
kulit:
350 gr terigu
70 gr margarin
30 ml minyak
140 gr air
isi:
2 ubi jalar kuning
secukupnya bihun
minyak goreng untuk menumis
bumbu:
7 bawang merah
4 bawang putih
1/2 sdt merica
secukupnya bumbu kaldu
secukupnya garam dan gula pasir
secukupnya minyak goreng untuk menggoreng
saos:
20 cabe rawit
secukupnya saos sambal
sedikit air
secukupnya gula, garam dan cuka


Langkah

Kupas ubi, potong dadu kecil2. Bihun diremdam hingga lemas.
Uleg bumbu hingga halus, tumis dg sedikit minyak. Masukkan ubi, ks air secukupnya biarkan hingga matang dan air menyusut. Masukkan bihun aduk rata, beri garam gula dan bumbu kaldu. Tes rasa cicipi. Sisihkan biarkan dingin
Campur semua bahan kulit, uleni hingga kalis. Ambil secukupnya, gilas tipis cetak bulat dg mulut mangkuk kecil, beri isian, lalu cubit lipat ala pastel/jalangkote. Lakukan sampai habis
Goreng hingga matang, gunakan api kecil. Kalau mau permukaan mulus, gunakan api kecil. Kadang ada jg yg suka kulitnya seperti ada gelembung2 gorengnya pake api sedang


Uleg cabe rawit. Campur dg saos sambal, garam gula dan cuka. Tes rasa cicipi
