All time favorite, kue basah tradisional yang selalu ada di berbagai momen. Mudah lho cara membuatnya, meskipun sepertinya banyak step yang harus dilalui. Sedap rasanya perpaduan aroma pandan, legitnya ketan dan gurihnya abon ayam. Yummy...


Hasil jadi: 20 potong
Bahan-bahan
Bahan Ketan
500 gr Beras Ketan Putih rendam 3 - 5 jam
300 ml Santan (dari perahan pertama dan kedua)
4 lbr daun pandan
secukupnya Garam
Bahan Abon
300 gr Daging Ayam, (kukus, suwir)
5 btr Bawang Merah (cincang)
3 btr Bawang Putih (cincang)
2 btg Sere (memarkan)
2 sdt Garam
4 lbr Daun Jeruk
2 sdm Gula Pasir
250 ml Air BOLEH santan)
Kaldu dari ayam kukus
Minyak untuk menumis


Langkah

Cuci bersih beras ketan putih, rendam dengan air 3 - 5 jam, bilas dan tiriskan. Didihkan air dalam dandang pengukus, kukus ketan sampai setengah matang sekitar 15 menit.
Didihkan santan, garam dan 2 lbr daun pandan, matikan api. Aduk santan mendidih dan ketan yang masih panas sampai semua santan terserap. Jika dirasa kurang lembut BOLEH ditambahkan air mendidih secukupnya.
Didihkan air dan 2 lbr daun pandan dalam dandang pengukus, kukus ketan yang sudah dicampur santan sampai matang sekitar 15 - 20 menit. Ketan siap dibentuk dan diisi abon, lakukan cepat selagi panas agar mudah dibentuk. (Biarkan ketan tetap di dandang supaya panasnya bertahan lama).
Abon Ayam : Panaskan dandang pengukus, letakkan ayam dalam wadah tahan panas, kukus sampai matang. Angkat ayam dan suwir memanjang. Di wadah akan tersisa kaldu dari ayam jangan dibuang, akan digunakan untuk membuat abon.
Panaskan minyak, tumis bawang merah, bawang putih, sere dan daun jeruk sampai harum. Masukkan suwiran ayam dan kaldu, masak sampai kering. Tambahkan air/santan, masak sampai hampir kering, bumbui gula garam, masak sampai air terserap habis, tes rasanya, matikan api dan biarkan dingin.
Penyelesaian: Ambil 2 sdm ketan, pipihkan di tangan, isi dengan abon, padatkan bentuk lonjong. Bungkus dengan daun. Jika akan dikukus atau dibakar lagi bungkus menyerupai lontong dan semat dengan lidi.
Lemper bisa disimpan selama 3 hari di kulkas. Setelah dibungkus daun, tunggu sampai dingin suhu ruang, simpan dalam wadah tertutup masukkan kulkas. Sebelum dihidangkan dikukus dulu, atau dipanggang dengan panggangan/teflon. Sebelum dipanggang dioles minyak goreng tipis-tipis.
